The enamel chips at rim contact points and eventually flakes into food when the base metal is exposed to acid. Careful handling and the use of wooden or silicone utensils keeps the enamel intact for 15 to 30 years. Copper cookware, when properly tinned, cooks better than any other material but requires retinning every 20 to 30 years for pieces in daily use, at a cost of 60 to 200 dollars per pan depending on size.
